– In a large skillet, brown the ground beef or turkey over medium-high heat. Add the chopped onion and minced garlic and cook until the onion is translucent and the meat is cooked through. Drain any excess fat.
– Stir in the refried beans, diced green chilies, ground cumin, chili powder, salt, and pepper. Cook for a few minutes until everything is well combined and heated through. Remove from heat.
– Preheat your oven to 350°F (175°C).
– Warm the flour tortillas in the microwave or on a griddle for about 10-15 seconds to make them pliable.
– Lay out each tortilla and spoon a portion of the meat and bean mixture onto the center of each tortilla.
– Add a scoop of cooked rice on top of the meat mixture.
– Sprinkle shredded cheese over the rice.
– Roll up each tortilla, folding in the sides as you go, to create a burrito.
– Place the burritos seam-side down in a baking dish.
– Pour the red enchilada sauce evenly over the top of the burritos.
– Sprinkle additional cheese on top.
– Bake in the preheated oven for about 20 minutes or until the cheese is melted and the burritos are heated through.
– Garnish with chopped fresh cilantro, sour cream, and sliced jalapeños.
– Serve these fabulous wet burritos hot and enjoy the flavorful fiesta in every bite!
