– 2 cups basmati rice – 500g chicken, cut into piece – 2 large onions, thinly sliced – 1/2 cup yogurt – 2 tomatoes, chopped – 2-3 green chilies, slit – 2 tablespoons ginger-garlic paste – 1/2 cup fresh coriander leaves, chopped – 1/2 cup fresh mint leaves, chopped – 1/4 cup cooking oil or ghee – 1/4 cup warm milk – A pinch of saffron strands (soaked in milk) – 1 teaspoon cumin seed – Whole spices (bay leaves, cinnamon, cardamom, cloves) – Salt to taste


Step 1: Prepare the Rice – Wash 2 cups of basmati rice thoroughly in cold water until the water runs clear. This removes excess starch and prevents the rice from becoming sticky. – Soak the washed rice in water for about 30 minutes. This helps the rice grains to absorb moisture, ensuring they cook evenly and don’t break during cooking. Drain the soaked rice and set it aside.
