Slice the French rolls or baguettes in half horizontally, creating a top and bottom for each sandwich. – Butter and Toast: In a small saucepan, melt the butter over low heat. Add the minced garlic and sauté for about a minute until fragrant. Brush the garlic butter generously onto the cut sides of the bread. – Cheese Layer (Optional): Place a slice of provolone or Swiss cheese on the bottom half of each roll if you desire a cheesy touch. – Warm and Melt: Place the bread halves (with or without cheese) on a baking sheet and bake in the preheated oven for about 5 minutes or until the bread is slightly toasted, and the cheese (if used) is melted. – Prepare Au Jus: In a separate saucepan, combine the beef broth, Worcestershire sauce (if using), dried thyme (if using), salt, and black pepper. Heat the mixture over medium heat until it’s warmed through. – Build the Sandwiches: Pile the thinly sliced roast beef onto the bottom halves of the prepared bread.
